A cachapa is a thick, slightly sweet pancake made from fresh corn kernels — not the precooked corn flour used for arepas. The corn is ground while still fresh and juicy, then cooked on a flat griddle called a budare, giving the cachapa a soft, moist texture closer to a corn cake than a tortilla.
Traditional fillings keep it simple: queso de mano or a similar soft, mild cheese folded or layered into the warm pancake. From there, cachapas are commonly topped with savory proteins — shredded beef, pork, ham or chicken — the way Mr Cachapa's menu does with its cachapa lineup below.
The main difference from an arepa comes down to the corn itself. Arepas are made from masa harina — precooked, dried corn flour rehydrated into dough — which grills or fries into a firmer, bread-like pocket that gets split and stuffed. A cachapa uses fresh corn straight off the cob, giving it a softer texture and a natural sweetness that arepas don't have.
